Add sauce and seasonings
Divide the 180ml (3/4 cup) marinara sauce evenly between the four flatbreads, spreading it in a thin, even layer with the back of a spoon and leaving a 1cm (1/2 inch) uncovered border for the crust. Sprinkle the garlic powder, dried oregano, and 1g (1/4 teaspoon) kosher salt evenly over the sauced surface of each flatbread.
Layer cheese and toppings
Divide the 220g (2 packed cups) shredded mozzarella evenly across the sauced flatbreads, spreading it in a thin, uniform layer. Top with the sliced cremini mushrooms, red bell pepper strips, and turkey pepperoni, distributing toppings evenly to avoid overloading any single section.
Bake until crispy
Place the baking sheets in the preheated 230°C (450°F) oven, and bake for 10 to 12 minutes total. Rotate the baking sheets 180 degrees and swap their rack positions at the 6-minute mark to ensure even cooking. Bake until the cheese is fully melted and bubbly, and the flatbread edges are deep golden brown and crisp to the touch.
Garnish and rest pizzas
Remove the baked pizzas from the oven, and let them rest on the baking sheets for 2 minutes to allow the cheese to set. Drizzle the remaining 10ml (2 teaspoons) of olive oil evenly over the top of each pizza, then scatter the fresh basil leaves across the surface.
Slice and serve pizzas
Transfer the rested pizzas to a wooden cutting board, slice each into 4 equal wedges using a sharp pizza cutter, and serve immediately while the crust is crisp and the cheese is hot and stretchy.
Tips
2.For an extra-crispy crust, preheat a pizza stone for 10 minutes before baking, then transfer the assembled flatbreads directly to the stone for the last 3 minutes of cook time.
3.Always pat high-moisture toppings (canned pineapple, pickled vegetables, fresh sliced tomatoes) dry with a paper towel before adding them to the pizza to prevent soggy crust; swap toppings freely to match your taste preferences.
