Flatbread Pizza
intro
Crispy, chewy thin flatbread topped with melty mozzarella, bright marinara, and fresh basil—ready in 20 minutes for a no-fuss, customizable weeknight dinner with zero dough rising required.
Ingredients
Steps
Preheat Oven, Prep Pan
Adjust your oven rack to the middle position, then preheat the oven to 230°C (450°F). Place the rimmed aluminum baking sheet to the right of the center work area, line it with a sheet of unbleached parchment paper, and smooth out any wrinkles to create a flat cooking surface. Set the honey oak cutting board in the center of the counter to begin prep.
Oil Flatbread Crusts
Place both flatbread crusts flat on the honey oak cutting board. Pour 2 teaspoons of the olive oil into one of the small matte white ramekins, and the marinara sauce into the second ramekin, setting both on the left side of the cutting board. Use the silicone-bristle pastry brush to spread a thin, even layer of olive oil across the entire top surface of each flatbread, making sure to fully coat the outer 1cm edge to encourage crisping. Sprinkle the 1/4 teaspoon garlic powder evenly across the oiled surface of both crusts.
Spread Marinara Evenly
Spoon 40ml (about 2.5 tablespoons) of marinara sauce onto the center of each oiled, garlic-dusted flatbread. Use the back of the long-handled stainless steel spoon to spread the sauce in a thin, uniform layer across the crust, leaving a 1cm (1/2 inch) plain border around the edge for the crust. Avoid spreading sauce too thickly, as excess moisture will make the pizza center soggy during baking.
Add Shredded Mozzarella
Sprinkle 56g (about 1/2 cup) of shredded low-moisture mozzarella evenly over the sauced surface of each flatbread, distributing cheese all the way to the edge of the sauce line. Avoid piling cheese thickly in the center, as this will prevent even melting and lead to a soggy crust. Season the cheese lightly with 1/8 teaspoon of freshly ground black pepper.
Bake Until Golden Crisp
Carefully transfer both topped flatbreads onto the parchment-lined rimmed aluminum baking sheet, leaving 2cm of space between them to allow hot air to circulate for even crisping. Place the baking sheet on the middle oven rack, bake for 8-10 minutes at 230°C (450°F). The pizza is done when the cheese is fully melted and bubbly, the crust edges are deep golden brown and crisp to the touch, and small light brown caramelized spots appear across the cheese surface.
Top with Fresh Basil
Remove the baking sheet from the oven, let the flatbreads rest for 2 minutes to allow the cheese to set slightly. While the pizzas are still warm, tear the fresh basil leaves into rough 2cm pieces and scatter them evenly across the top of both pizzas (tearing instead of cutting prevents bruising and preserves bright basil flavor). Drizzle the remaining 1 teaspoon of olive oil over the basil and crust edges, then sprinkle with 1/2 teaspoon flaky sea salt and the remaining 1/8 teaspoon black pepper.
Slice and Serve Warm
Transfer the garnished flatbreads from the baking sheet to the creamy white hand-thrown ceramic dinner plate. Use the stainless steel pizza cutter to slice each flatbread into 3 even triangular wedges, pressing straight down through the crust instead of dragging the wheel to avoid pulling cheese and toppings off the pizza. Serve immediately while the crust is crispy and the cheese is warm and stretchy.
Tips
2.Don't skip the 2-minute rest after baking: this short pause lets the melted cheese set slightly so it doesn't slide off slices when you cut them, and allows excess steam to escape from the crust, keeping edges crisp instead of turning soft.
3.Customize toppings sparingly: if adding extra toppings like cooked mushrooms, pepperoni, or roasted vegetables, pat them very dry with a paper towel first and spread them in a thin layer—too many wet or heavy toppings will weigh down the thin flatbread and prevent it from crisping properly.

OMG this was SO good for a last-minute weeknight dinner! I grabbed pre-made flatbread from the grocery store on my way home, threw the toppings on while my kid set the table, and it was done before we even finished picking a family movie to watch. My 7 year old asked for seconds which never happens with veggie-forward meals! Total game changer for busy school nights.
Took this to a neighborhood potluck last weekend and it was gone in 10 minutes flat! I added a tiny sprinkle of red pepper flakes to half the batch for folks who like a little heat, but the classic Margherita version was the clear crowd favorite. Quick question though — has anyone tried prepping these ahead and freezing them for weekly meal prep?
I was so skeptical how good a 10-minute pizza could be but wow, this exceeded every single expectation. I used fresh mozzarella from the little Italian deli down the street and basil from my windowsill herb planter, and it tasted exactly like the fancy $18 flatbread we order on date night downtown! My husband is already begging me to make a double batch for his guys’ game night this weekend.
