intro

A cozy, cheesy Italian-American baked pasta dish with a crispy spaghetti crust, savory meat sauce, and gooey melted cheese, ideal for shared family meals.

Ingredients

Dry spaghetti 340 grams (12 oz)
Olive oil 2 tablespoons (30 ml)
Lean ground beef 450 grams (1 lb)
Yellow onion 1 small (110 grams, diced)
Garlic 3 cloves (10 grams, minced)
Marinara sauce 960 ml (4 cups)
Shredded low-moisture mozzarella cheese 340 grams (3 cups, divided)
Whole-milk ricotta cheese 225 grams (1 cup)
Grated Parmesan cheese 65 grams (2/3 cup)
Large eggs 2 (100 grams, beaten)
Italian seasoning 1 teaspoon (2 grams)
Kosher salt 1.5 teaspoons (9 grams, divided)
Ground black pepper 0.5 teaspoon (1 gram, divided)
Unsalted butter 1 tablespoon (14 grams, softened)

Steps

1

Cook and prep spaghetti

Bring a large pot of 3 liters (12 cups) heavily salted water to a rolling boil over high heat. Add 340g dry spaghetti, cook for 8 minutes until al dente (firm to the bite, not soft or mushy, as it will cook further in the oven). Drain pasta fully in a colander, toss with 1 tablespoon (15ml) olive oil to prevent strands from sticking together, then set aside to cool for 5 minutes.

2

Sauté meat sauce base

Heat the remaining 1 tablespoon (15ml) olive oil in a 30cm (12 inch) skillet over medium heat. Add 110g diced small yellow onion, cook for 3 minutes until soft and translucent, stirring occasionally. Add 10g minced garlic (3 cloves), cook for 30 seconds until fragrant, then add 450g lean ground beef. Break the beef apart with a wooden spoon as it cooks, for 7 minutes, until fully browned with no pink remaining. Drain excess rendered grease from the skillet, then stir in 960ml (4 cups) marinara sauce, 1 teaspoon Italian seasoning, 1 teaspoon kosher salt, and 1/4 teaspoon ground black pepper. Reduce heat to low, simmer the sauce for 5 minutes, then remove from heat and set aside.

step2:Sauté meat sauce base
3

Form spaghetti crust

In a large mixing bowl, whisk 2 beaten large eggs until smooth. Add the cooled cooked spaghetti, 65g (2/3 cup) grated Parmesan cheese, remaining 0.5 teaspoon kosher salt, and remaining 1/4 teaspoon ground black pepper. Toss thoroughly with tongs until every spaghetti strand is evenly coated with the egg and cheese mixture. Grease the entire interior of a 23cm (9 inch) deep-dish pie pan with 1 tablespoon (14g) softened unsalted butter, then press the spaghetti mixture firmly into the bottom and 2.5cm (1 inch) up the sides of the pan to create a tight, even crust.

Step 3
step3:Form spaghetti crust
4

Layer cheese filling

Scoop 225g (1 cup) whole-milk ricotta cheese over the spaghetti crust, then spread it gently with a spatula into an even layer across the bottom of the crust, leaving a 1cm (1/2 inch) border at the top of the crust edge. Sprinkle 170g (1.5 cups) of the shredded mozzarella cheese evenly over the ricotta layer, pressing lightly to help the cheese adhere to the ricotta.

Step 4
step4:Layer cheese filling
5

Add sauce layer

Pour the warm meat marinara sauce over the cheese layers, spreading it gently with a silicone spatula to cover the entire mozzarella surface evenly. Take care not to press too hard, as this will mix the layers together and cause the filling to leak through the crust. Smooth the top of the sauce so it sits level with the top edge of the spaghetti crust.

Step 5
step5:Add sauce layer
6

Bake until bubbly

Preheat oven to 190°C (375°F). Sprinkle the remaining 170g (1.5 cups) shredded mozzarella cheese evenly over the top of the sauce layer. Place the pie pan on a rimmed baking sheet to catch any bubbling drips, then transfer to the middle rack of the preheated oven. Bake for 25 minutes, until the top cheese is fully melted, golden and bubbly around the edges, and sauce is gently bubbling up through spots in the cheese.

Step 6
step6:Bake until bubbly
7

Rest before serving

Carefully remove the baked pie from the oven, transfer it to a wire cooling rack, and let it rest at room temperature for 10 full minutes to set (this is critical for clean, intact slices). After resting, slice into 6 even wedges and serve warm.

Step 7
step7:Rest before serving

Tips

1.Do not overcook the spaghetti during the initial boil: it will continue to cook for 25 minutes in the oven, so cooking it to al dente (8 minutes boil time) prevents a soggy, mushy crust.
2.Always let the pie rest for the full 10 minutes after baking: cutting into it immediately will cause the hot cheese and sauce to run, leading to messy, falling-apart slices.
3.Customize fillings to taste: swap ground beef for crumbled Italian sausage, add sautéed bell peppers or mushrooms to the sauce, or mix in sliced black olives for extra flavor.

Spaghetti Pie:Frequently Asked Questions

1.How do I keep the spaghetti crust from turning soggy instead of crispy when I bake it?
After boiling your spaghetti to al dente, drain it really well to shake off all excess starchy water, toss with a light coating of olive oil and one beaten egg, then press firmly into your greased pie plate. Blind bake the crust for 8 minutes at 375°F before adding fillings to create a barrier that stops sauce from seeping in and ruining that signature crispy, golden crust.
2.Can I prep this baked spaghetti pie ahead of time for busy weeknights or potlucks?
Absolutely! Assemble the fully layered pie (hold off on the final top cheese sprinkle) up to 2 days ahead, cover tightly with plastic wrap, and store it in the fridge. When ready to bake, top with the reserved cheese, add 10–12 minutes to the standard bake time, then let it rest 10 minutes before slicing for neat, easy-to-serve pieces.
3.What easy swaps work for the lean ground beef if I want to adjust the filling?
You have tons of flexible, tasty swaps that work perfectly at a 1:1 ratio for the lean ground beef: ground turkey, mild or spicy Italian sausage (casings removed), or plant-based ground crumble. For a vegetarian take, swap in sautéed cremini mushrooms, diced bell pepper, and zucchini to keep the filling rich, savory, and hearty.
4.Why do I need to let spaghetti pie rest after it comes out of the oven?
Just like lasagna or a savory meat pie, baked spaghetti pie needs 10 full minutes of resting time straight out of the oven to let the melted cheese, savory meat sauce, and egg-set spaghetti crust firm up. Slice it immediately, and all the gooey filling will slide out, leaving messy, loose portions instead of neat pie wedges.

OMG this was such a game changer for our weekly family dinner! I was so tired of regular spaghetti night, and this was so easy to throw together even after a long work day. My kids devoured two slices each and asked when we’re making it again. 10/10, will be bringing this to our next neighborhood potluck too!

Wait did you add any extra cheese on top? I’m thinking of tossing in some pepperoni too to make it feel like a pizza spaghetti hybrid lol

So glad your family loved it, Lindsey! Adding extra mozzarella on top for the last 10 minutes of bake time makes for the perfect crispy cheese crust, and pepperoni is such a fun twist—highly recommend giving it a try!

Meal prep win! I made this on Sunday and portioned it out for lunches all week, it reheats like an absolute dream. No soggy noodles, the flavor holds up perfectly, and it’s way more satisfying than sad desk salads. So glad I stumbled on this easy recipe!

Wait, can I use gluten free spaghetti for this? My youngest has a gluten sensitivity and I’ve been hunting for recipes the whole family can eat without making separate meals. This looks perfect otherwise!

Great question, Ashley! Gluten free spaghetti works perfectly here—just make sure to cook it al dente before pressing it into the pie plate so it doesn’t get mushy while baking. Hope your whole family loves it!

I brought this to my office potluck yesterday and people were begging me for the recipe before we even got to dessert! It held up great on the 20 minute drive in, was still warm when we served it, and even the picky eaters in my department went back for seconds. SO good.

Did you let it cool completely before slicing? I tried a similar spaghetti pie recipe once and it fell apart when I cut into it at a potluck, total chaos lmao

yesterday

I let it rest for about 15 minutes after pulling it out of the oven before I sliced and packed it up, that’s the trick! No slidey, falling apart slices at all, total potluck win.

As someone who barely knows how to boil water without burning it, this recipe was so forgiving! I used jarred marinara because I didn’t have time to make homemade, skipped the fresh herbs because I didn’t have any, and it still turned out insane. My roommates thought I was a gourmet chef for a second lmao. 10/10 easy win for broke college students.

Same! I made this in my tiny dorm oven last week and even with all the janky substitutions I had to make (used shredded cheddar instead of mozzarella oops) it slapped. Total game changer for dorm cooking

I’ve been making a version of spaghetti pie for years and I have to say, this recipe nails the perfect ratio of noodles to cheese to sauce! I love that you don’t overcomplicate it with a million fancy add-ins, it’s just classic, cozy comfort food that tastes like Sunday dinner at my grandma’s house. Already bookmarked to make again next weekend.
