Huckleberry Pancakes
intro
Fluffy golden pancakes studded with tart-sweet wild huckleberries, served warm with maple syrup for a cozy, nostalgic weekend family breakfast.
Ingredients
Steps
Whisk dry ingredients
In a large mixing bowl, combine 180g (1 ½ cups) all-purpose flour, 25g (2 tablespoons) granulated sugar, 8g (2 teaspoons) baking powder, and 3g (½ teaspoon) fine sea salt. Whisk for 30 seconds until fully evenly combined, with no clumps of baking powder left in the mixture.
Mix wet ingredients
In a separate medium ceramic bowl, crack 2 large shelled eggs (100g total), whisk lightly for 20 seconds, then stir in 300ml (1 ¼ cups) whole milk, 42g (3 tablespoons) melted and slightly cooled unsalted butter, and 5ml (1 teaspoon) pure vanilla extract. Mix until smooth, taking care not to over-whisk the eggs to avoid dense pancakes.
Combine batter gently
Pour the entire wet ingredient mixture into the bowl of dry ingredients. Use a silicone spatula to stir in slow, broad folding strokes for 45 seconds, stopping as soon as no dry flour streaks remain; the batter will be slightly lumpy, which creates light, fluffy pancakes. Do not overmix, as overworked gluten leads to tough, chewy pancakes.
Fold in huckleberries
Add 100g (⅔ cup) of the huckleberries to the batter, reserving 50g (⅓ cup) for fresh topping. Fold them in very gently for 10 seconds to evenly distribute, taking care not to burst the berries (which would bleed purple juice and discolor the batter). Let the batter rest for 5 minutes at room temperature to allow the baking powder to activate for extra fluff.
Cook pancake batches
Heat a large nonstick skillet or cast iron griddle over medium-low heat (160°C / 325°F). Grease the surface with 5g (1 teaspoon) of the reserved butter for greasing. Use a 60ml (¼ cup) measuring cup to pour batter rounds onto the griddle, leaving 5cm (2 inches) of space between each pancake. Cook for 2 to 2.5 minutes, until small bubbles form and pop on the batter surface and the edges look set and slightly matte.
Flip and finish cooking
Use a thin, flexible nylon spatula to flip each pancake in one smooth, quick motion. Cook for an additional 1.5 to 2 minutes on the second side, until both sides are deep golden brown and the pancake springs back lightly when pressed gently in the center (internal temperature of 93°C / 200°F). Transfer cooked pancakes to a wire rack set over a baking sheet in a 95°C (200°F) oven to keep warm, and repeat with remaining batter, greasing the griddle with 5g (1 teaspoon) of butter between each batch.
Serve warm stacks
Divide the cooked pancakes between 4 plates, stacking 3 pancakes per serving. Top each stack with 12.5g (about 1 tablespoon) of the reserved fresh huckleberries and drizzle with 30ml (2 tablespoons) of pure maple syrup per serving. Serve immediately while the pancakes are hot and fluffy.
Tips
2.Never press down on pancakes with your spatula while cooking, as this squeezes out the light air pockets created by the leavening and results in flat, tough pancakes instead of fluffy ones.
3.Keep cooked pancakes warm on a wire rack in a low oven rather than stacking them directly on a plate, as stacking traps steam that makes pancake surfaces soggy instead of tender and lightly crisp.

OMG these huckleberry pancakes are a game changer! We foraged a ton of huckleberries last weekend up in the mountains and I’ve been looking for a fun easy recipe to use them in. 25 minute cook time was totally accurate, I even had time to brew coffee while they cooked. My kids devoured a whole stack before I even sat down to eat!
Made these for Sunday breakfast this week and WOW, so fluffy! I used frozen huckleberries since I couldn’t find fresh at my grocery store and they still turned out perfect. Super easy even for someone like me who burns toast half the time lmao
Brought these to my neighborhood potluck last weekend and people were begging for the recipe before I even set the platter down! The fluff factor is insane, I don’t think I’ll ever use boxed pancake mix again. Only change I made was adding a tiny drizzle of lemon glaze on top, chef’s kiss.
Super easy recipe for a quick weekend breakfast, even in my tiny dorm kitchen! I swapped regular milk for oat milk because that’s all I had and they still came out so fluffy. The huckleberries add the perfect tart kick to balance the sweet maple syrup. 10/10
Wait y’all, I made a big batch of these on Sunday and froze the leftovers for quick weekday breakfasts for my kids. They reheat so well in the toaster! Definitely adding this to my regular meal prep rotation, saves me so much time on chaotic school mornings.
Made these after a long early morning hike last weekend with my trail crew, and everyone was raving. The huckleberry flavor tastes just like the ones we pick on our trails, and they were so filling after 6 miles of uphill hiking. Easy to make even over a camp stove if you pre-mix the dry ingredients at home!
Super nervous to try these because my youngest has a mild egg allergy, so I swapped the eggs for flax eggs and they still came out SO fluffy! I was shocked, usually egg-free pancakes turn out flat and rubbery. The whole family loved them, even my super picky 7 year old.
These are legit the fluffiest pancakes I’ve ever made at home. I added a little extra vanilla and a handful of white chocolate chips with the huckleberries, and it was like eating dessert for breakfast. No regrets. 10/10 will make again next weekend.
I’ve been making huckleberry pancakes for my grandkids for 40 years, and I have to say this recipe is even better than my old go-to! The trick of letting the batter rest for 5 minutes before cooking is what makes them so fluffy, I never thought to do that before. They all asked for seconds (and thirds!)
This was the first recipe I ever made completely on my own (I’m 16, my mom usually does all the cooking) and it turned out perfect! It was so easy to follow, no weird complicated steps. I made it for my mom for Mother’s Day breakfast and she cried, lmao. 10/10
Found wild huckleberries growing on my property last summer and froze a bunch, so I pulled a bag out to make these this morning. Let me tell you, these are restaurant quality! The texture is so light and fluffy, not dense and heavy like other homemade pancake recipes I’ve tried. Only note: don’t overmix the batter, that’s the key to fluff!
Made these as a post-workout carb up this morning, used whole wheat pastry flour instead of all purpose and added a scoop of vanilla protein powder, and they were still so fluffy! The huckleberries add great flavor without needing a ton of extra syrup. Perfect macro-friendly breakfast that doesn’t taste like diet food.
Hosted a big brunch for 8 people last weekend and made a double batch of these, and there were zero leftovers! Everyone kept commenting on how light they were, and the huckleberry flavor was such a fun change from regular blueberry pancakes. Will absolutely be making these for every brunch I host from now on.
Went huckleberry picking with my grandma yesterday and we made these as soon as we got home. They taste like summer in a stack! We topped ours with homemade whipped cream and extra huckleberry compote, and we ate them out on the porch while watching the sunset. Perfect memory.
My partner swore boxed pancake mix was better than any homemade recipe, so I made these to prove him wrong. He ate three whole stacks and admitted I was right! These are SO good, the fluff is unreal, and the huckleberries add the perfect little tart pop. 10/10, relationship win.
Tried these after seeing them pop up on my feed, and they did not disappoint! I was worried they’d be too sweet, but the sugar level is perfect so the huckleberry flavor really shines. Cooked them on my cast iron griddle and got that perfect golden crispy edge, ugh so good.
I run a tiny weekend breakfast pop-up in my small town, and I tested these huckleberry pancakes as a special last Saturday. They sold out in 45 minutes flat! I had so many regulars swing back by the booth asking if I’d add them to the permanent menu. Absolute home run of a recipe.
