King Ranch Chicken
intro
Creamy, cheesy Tex-Mex layered casserole with tender chicken, corn tortillas, and zesty green chiles, baked to bubbly golden perfection for cozy, crowd-pleasing meals.
Ingredients
Steps
Cook and shred chicken
Cut 450 grams boneless, skinless chicken breasts into 5cm (2-inch) chunks, place in a medium stockpot, cover with 5cm (2 inches) of cold water, and bring to a rolling boil over medium-high heat. Reduce heat to medium-low, cover, and simmer for 8–10 minutes until chicken reaches an internal temperature of 74°C (165°F). Transfer chicken to a cutting board, let cool 3 minutes, then shred into 2.5cm (1-inch) pieces with two forks; set aside.
Sauté aromatic vegetables
Melt 2 tablespoons (28 grams) unsalted butter in a 25cm (10-inch) skillet over medium heat. Add 1 cup (150 grams) diced yellow onion and 1 cup (150 grams) diced green bell pepper, sautéing for 6–7 minutes until soft and translucent, stirring occasionally to prevent burning. Stir in 1 tablespoon (7 grams) chili powder, 1 teaspoon (2 grams) ground cumin, 1 teaspoon (3 grams) garlic powder, 1 teaspoon (5 grams) kosher salt, and 1/2 teaspoon (1 gram) black pepper, cooking for 30 seconds until spices release a warm, fragrant aroma.
Mix creamy sauce base
Transfer the sautéed vegetable and spice mixture to a large 3-liter mixing bowl. Add the reserved shredded chicken, drained 113 gram (4-oz) can of roasted diced green chiles, 298 gram (10.5-oz) can of cream of chicken soup, 1 cup (227 grams) full-fat sour cream, and 1/2 cup (120 ml) low-sodium chicken broth. Stir thoroughly with a rubber spatula for 1–2 minutes until all ingredients are evenly combined into a thick, pale creamy sauce flecked with green chiles and chicken.
Layer casserole components
Preheat oven to 175°C (350°F). Grease a 23x33cm (9x13 inch) glass baking dish with nonstick cooking spray or a thin coat of butter. Arrange 1/3 of the cut corn tortilla strips in a single even layer across the dish bottom, top with 1/2 of the creamy chicken mixture, and sprinkle with 1/3 (75 grams) of the shredded sharp cheddar cheese. Repeat this layering sequence once more, then finish with the remaining 1/3 of tortilla strips and last 1/3 of cheese on the very top.
Bake until bubbly
Cover the baking dish tightly with aluminum foil, place on the middle oven rack, and bake for 25 minutes at 175°C (350°F). Remove the foil cover, then continue baking for 10–12 minutes until the cheese is fully melted, the casserole edges are actively bubbling, and the top tortilla strips are lightly golden and crisp around the edges. Remove from oven and let rest 10 minutes before serving.
Tips
2.Let the baked casserole rest for the full 10 minutes before serving to allow the creamy layers to set, preventing runny, messy slices.
3.For a mild spicy kick, stir 1/4 teaspoon cayenne pepper into the sauce base, or top individual servings with pickled jalapeños and fresh cilantro.

OMG this King Ranch casserole is an absolute game changer! I brought it to my church potluck last Sunday and every single person asked for the recipe. The cream of mushroom + Rotel combo is exactly the nostalgic flavor I grew up eating at my grandma’s house in San Antonio. 10/10, will be making this on repeat for weeknight dinners!
Super easy recipe that holds up amazing for meal prep! I divided the whole pan into 6 individual containers for my work lunches this week, and it reheats perfectly in the microwave without getting soggy. Only swap I made was using Greek yogurt instead of sour cream to cut a few calories, and you couldn’t even tell the difference. SO good.
Made this last night for my three picky kids and they all went back for seconds! I was worried the green chiles would be too spicy for them, but the flavor was totally mild and cozy. Served it with a side of corn chips and a little salad, zero dinner table fights for once. Win in my book.
Finally a King Ranch casserole recipe that’s easy to adapt for gluten free! I swapped the regular cream soups for GF versions and used corn tortillas instead of flour, and it turned out absolutely perfect. My whole family (even the non-GF eaters) devoured it. Will be a regular on our dinner rotation!
This is hands down the best King Ranch chicken recipe I’ve ever tried! I’ve messed up so many versions in the past that came out too watery, but the ratio here is perfect — thick, creamy, packed with chicken and that iconic tang from the Rotel. Baked it for my husband’s birthday dinner and he said it’s better than his mom’s… don’t tell her though 😂
I was skeptical because I usually think casseroles are boring, but this blew me away. The layers of tortilla, creamy chicken filling, and melted cheese get all crispy on the edges which is *chef’s kiss*. Even my roommate who claims to ‘hate casseroles’ had two huge servings. No leftovers at all, which never happens at our place. Only reason it’s not 5 stars is I wish there was a little more kick out of the box, but that’s an easy fix with a dash of cayenne next time. Still absolutely delicious!
Wait why did I wait so long to make this?! I used a rotisserie chicken from the grocery store to cut down on prep time, and this came together in like 15 minutes before popping it in the oven. Tastes like pure comfort food, perfect for the random cold snap we got here in Florida this week. 10/10, no notes.
Made this in my tiny dorm oven for my roommates and it was a total hit! Super easy to follow, no fancy ingredients, and the whole pan cost like $12 to make which is way cheaper than getting takeout all week. I did add a little extra taco seasoning because I love that flavor, and it slapped.
I brought this to our neighborhood block party over the weekend and it was the first dish to get completely cleaned out. People were scraping the edges of the pan to get the crispy cheese bits! The only thing I’ll do differently next time is double the recipe, because a single 9x13 pan was nowhere near enough for 20 people.
This recipe is such a great base! I added a can of diced jalapeños, a sprinkle of chili powder, and a handful of crushed tortilla strips on top for extra crunch and heat, and it was unreal. It’s creamy, cheesy, and has just enough kick to keep it interesting. Will absolutely make this again.
I’ve been making a different King Ranch recipe for years, but this one is officially my new go-to. The cook time is spot on — I prepped it while my kid was at soccer practice, popped it in the oven when we got home, and it was done right when we were all ready for dinner. No fancy steps, no weird ingredients, just solid, cozy comfort food.
Okay but the cheese pull on this is insane. I used a mix of sharp cheddar and pepper jack because it’s what I had in the fridge, and the flavor was out of this world. Served it with a dollop of sour cream and some avocado slices on top, and my boyfriend said it’s the best thing I’ve ever cooked. Total win!
