intro

Rich, indulgent baked pasta folded with sweet lobster meat, silky three-cheese sauce, and crispy panko topping for the ultimate cozy comfort meal.

Ingredients

Cooked picked lobster meat 340 grams (1.5 cups, cut into 2.5cm chunks)
Dry elbow macaroni 225 grams (2 cups)
Sharp white cheddar cheese (freshly shredded) 226 grams (2 cups)
Gruyère cheese (freshly shredded) 113 grams (1 cup)
Full-fat cream cheese (softened) 56 grams (2 oz)
Whole milk (warmed) 480 ml (2 cups)
Unsalted butter (divided) 85 grams (6 tablespoons)
All-purpose flour 24 grams (3 tablespoons)
Panko breadcrumbs 60 grams (0.5 cup)
Dijon mustard 5 ml (1 teaspoon)
Kosher salt 1.5 teaspoons, plus extra for pasta water
Freshly ground black pepper 0.5 teaspoon
Smoked paprika 0.25 teaspoon
Fresh flat-leaf parsley (chopped) 2 tablespoons

Steps

1

Cook pasta and prep lobster

Bring a large stockpot of heavily salted water (1 tablespoon kosher salt per 4 liters of water) to a rolling boil over high heat. Add dry elbow macaroni and cook for 6 minutes, which is 2 minutes shorter than the package’s al dente recommendation, as the pasta will finish cooking in the oven. Drain the pasta, toss with 1 tablespoon (14g) of unsalted butter to prevent sticking, and set aside. If using raw lobster, steam whole lobsters over boiling water for 8 minutes until shells are bright red, cool completely, pick all meat from shells and claws, cut into 2.5cm (1 inch) chunks, and set aside.

step1:Cook pasta and prep lobster
2

Make the roux base

Melt 4 tablespoons (57g) of unsalted butter in a large heavy-bottomed saucepan over medium-low heat. Once the butter is foaming but not browned, whisk in 3 tablespoons of all-purpose flour to form a smooth, thick paste. Cook the roux, whisking constantly, for 2 minutes until it smells faintly nutty and turns a pale golden color; do not let it darken to a brown roux, as this will alter the sauce’s mild flavor.

Step 2
step2:Make the roux base
3

Finish cheese sauce

Slowly stream the warmed whole milk into the roux, whisking constantly to avoid lumps, until fully combined. Increase heat to medium to bring the sauce to a gentle, low simmer, then cook for 3-4 minutes until the sauce is thick enough to coat the back of a spoon (a line drawn through the sauce on the spoon with your finger will hold its shape). Reduce heat to low, stir in Dijon mustard, kosher salt, black pepper, and smoked paprika, then add shredded white cheddar, Gruyère, and softened cream cheese. Stir constantly for 2 minutes until all cheese is fully melted and the sauce is completely smooth, then remove from heat.

step3:Finish cheese sauce
4

Fold pasta and lobster

Add the drained, buttered elbow macaroni and 270 grams (1.2 cups) of the lobster chunks into the pot of cheese sauce. Stir gently with a rubber spatula over low heat for 1 minute until every pasta noodle is evenly coated in sauce, taking care not to over-stir and break up the tender lobster pieces. Reserve the remaining 70 grams (0.3 cup) of lobster meat for topping the dish before baking.

Step 4
step4:Fold pasta and lobster
5

Assemble baking dish

Preheat your oven to 190°C (375°F). Use 0.5 tablespoons (7g) of unsalted butter to generously grease the inside of a 2-quart (2 liter) ceramic baking dish. Pour the lobster mac and cheese mixture into the dish, spreading it into an even, smooth layer. Scatter the reserved lobster chunks evenly across the top of the pasta. Melt the remaining 0.5 tablespoons (7g) of butter, toss with panko breadcrumbs until fully coated, then sprinkle the buttered panko in an even layer over the entire surface of the dish.

Step 5
step5:Assemble baking dish
6

Bake and rest dish

Place the baking dish on the middle rack of the preheated oven, and bake for 20-22 minutes until the cheese sauce is actively bubbling around the edges of the dish and the panko topping is a deep, crispy golden brown. Remove the dish from the oven, and let it rest for 5 full minutes at room temperature to allow the sauce to set, then garnish with chopped fresh flat-leaf parsley before serving.

Tips

1.Always shred cheese fresh from a block for the sauce: pre-shredded bagged cheese is coated in potato starch or other anti-caking agents that prevent smooth melting and result in a grainy, lumpy sauce.
2.Do not fully cook your pasta before adding it to the sauce: the noodles will absorb cheese sauce and continue cooking in the hot oven, so undercooking by 2 minutes ensures the final dish has tender, not mushy, pasta.
3.Warm your milk before adding it to the hot roux: pouring cold milk directly into the roux will cause the flour-butter mixture to seize up, creating stubborn lumps that are impossible to whisk out of the sauce.

Lobster Mac and Cheese:Frequently Asked Questions

1.Can I use pre-shredded store-bought cheese instead of shredding my own for this recipe?
I really don’t recommend it! Pre-shredded cheddar and Gruyère are coated in potato starch and anti-caking agents that prevent the cheese from melting smoothly, which leaves your sauce grainy instead of silky. It only takes 3 to 4 minutes to shred fresh blocks of cheese with a box grater, and it makes a massive difference in the final rich, smooth texture.
2.How do I keep the lobster meat from turning rubbery and tough in the baked mac?
Great question! Start with properly cooked, not overboiled, picked lobster meat to begin with. Fold the lobster into the cheese sauce and pasta right before you pop the dish in the oven, and stick to a 20 to 22 minute bake time at 375°F. The warm sauce will gently heat the lobster through without overcooking it into tough, chewy bits.
3.Can I prep this lobster mac and cheese ahead of time for a dinner party?
Absolutely! Assemble the pasta, cheese sauce, and lobster in your baking dish (hold off on adding the panko topping) up to 24 hours in advance, cover tightly, and store it in the fridge. When you’re ready to bake, sprinkle on the panko, add 5 to 7 minutes to the bake time to account for the cold dish, and you’ll get perfect, fresh-tasting results.
4.I don’t have Gruyère at home—what’s a good substitute that won’t ruin the dish?
Swap Gruyère for an equal amount of shredded fontina for that same nutty, ultra-melty, stretchy quality, or use a mild domestic Swiss cheese if that’s what you have on hand. Skip extra-sharp yellow cheddar as a replacement, since its bold, tangy flavor will overpower the delicate, sweet taste of the fresh lobster meat.
5.Why does my cheese sauce turn out grainy instead of perfectly silky?
Grainy sauce almost always stems from two easy-to-fix missteps: cooking your roux base at too high a heat, or dumping in all the cheese (including the softened full-fat cream cheese) at once while the base is boiling. Keep your roux on medium-low heat, take the pan off heat for 1 minute before adding cheese a handful at a time, stirring constantly, for that luxuriously smooth texture.

OMG this creamy baked lobster mac and cheese was the total star of our Sunday family dinner last night! I was a little nervous about tackling it since the difficulty is listed as medium and I’m not super confident cooking seafood, but the steps were so clear and easy to follow. My kids went crazy for it and asked for seconds before they even finished their first servings, and my husband said it’s better than the fancy version we get at our go-to coastal steakhouse. SO good, 10/10 will absolutely be making this for our neighborhood potluck next month!

Wait quick question — did you use fresh lobster or frozen for this? I’m making it for my birthday dinner next week and don’t want to mess it up! It sounds incredible from your review, I can already tell it’s gonna be a hit with my friend group.

Such a great question! Both fresh steamed lobster and properly thawed frozen lobster tails work beautifully for this recipe. If you go the frozen route, just be sure to pat the lobster meat really dry before folding it into the cheese sauce so it doesn’t thin out that rich, creamy texture. Happy early birthday, hope your birthday meal turns out absolutely perfect!

Total game changer! I prepped the cheese sauce and cooked the pasta the night before to cut down on weeknight dinner chaos, then tossed everything with the lobster and baked it when I got home from work. The 55 minute cook time is totally accurate, even with my old janky oven that runs 25 degrees too hot. That crispy panko topping paired with the rich, creamy lobster cheese filling? *Chef’s kiss* My only tiny tweak was adding a pinch of Old Bay to the breadcrumb mix and it took the whole dish over the top.

Oh the Old Bay addition is genius! I always sprinkle Old Bay on my lobster rolls at summer cookouts, can’t believe I didn’t think to add it here. Definitely stealing that hack when I make this for my roommate’s house party this weekend!

Made this for my weekly meal prep last Sunday and it held up so well all week for work lunches! I was worried the cheese sauce would get grainy or separate when reheated, but it stayed perfectly creamy even after 2 minutes in the office microwave. It’s worth every penny splurging on nice lobster meat — it felt like I was eating a fancy restaurant lunch instead of the sad desk salads I usually rotate through. Only reason it’s not a full 5 stars is I wish the recipe yielded a little more, I ate way too big of a portion the first night and ran out of lunch servings by Thursday 😂 Will absolutely be adding this to my regular meal prep lineup, just gonna double the batch next time!
