Aviation
intro
A delicate, pale sky-blue classic gin cocktail with bright citrus, floral violet, and subtle nutty maraschino notes, created in early 1900s New York.
Ingredients
Steps
First, prep your components: squeeze 90ml (6 tbsp) of juice from room-temperature ripe lemons, straining out all seeds and bitter white pulp through a fine-mesh sieve. Place 4 standard 150ml (5oz) coupe glasses in the freezer to chill for 3 full minutes before use.
Assemble the cocktail base: set a large 750ml cocktail shaker on the counter, and add 240ml (1 cup) London dry gin, 60ml (1/4 cup) Luxardo maraschino liqueur, 30ml (2 tbsp) crème de violette, and the pre-strained 90ml lemon juice directly into the shaker base. Do not add ice at this stage to prevent premature over-dilution.
Fill the cocktail shaker ¾ of the way full with large, fresh ice cubes (roughly 3 cups of ice), then press the shaker lid on tightly to create a watertight seal. Hold the shaker with both hands and shake vigorously in an up-and-down motion for 15 full seconds, until the outside of the shaker feels frosty and uncomfortably cold to touch.
Retrieve the pre-chilled coupe glasses from the freezer. Fit a Hawthorne strainer over the mouth of the cocktail shaker, and pour equal portions of the shaken cocktail into each glass, measuring roughly 105ml (3.5oz) per serving to leave a 1cm gap at the rim of each glass for garnish.
Prep the lemon twist garnishes: take 4 strips of lemon peel (each 5cm long, trimmed to remove all bitter white pith), hold each peel 10cm above a filled glass, and squeeze gently to release fragrant citrus oils onto the drink surface. Rub the peel lightly along the glass rim before resting it on the edge of the coupe.
Finish each drink by skewering one brandied maraschino cherry on a 10cm bamboo cocktail pick and resting it across the rim of each glass. Serve immediately, while the drink is at 2-4°C (35-40°F), to preserve the bright, balanced flavor and crisp chill.
Tips
2.Measure all ingredients carefully with a jigger rather than free-pouring: too much crème de violette will give the drink an unpleasant soapy flavor, while too much lemon juice will overpower the delicate floral notes.
3.Do not stir this cocktail: the 15-second hard shake aerates the mixture, lightens the texture, and evenly blends the dense floral liqueurs with bright lemon juice for a smooth, perfectly balanced sip.

OMG this is SO good! I made these for my girls’ night potluck last weekend and everyone was begging for the recipe. I was worried the crème de violette would be too floral but it’s perfectly balanced, total game changer. So easy to throw together too, took me literally 5 minutes just like the recipe says!
Whipped this up after a long work day this week, hit the spot perfectly. I didn’t have fresh lemon juice so I used the bottled stuff and it was still great, no complaints. Will be adding this to my regular Friday night rotation for sure.
I’ve been searching for a solid classic Aviation recipe forever! So many versions skimp on the maraschino liqueur or way overdo the violet liqueur, but these ratios are spot on. Made them for my 1920s themed dinner party last night and they fit the vibe perfectly.
First time making any craft cocktail at home and this was so easy! Tasted way better than the Aviation I ordered at a fancy cocktail bar last month tbh. Quick question though – can I prep the juice and liqueur mix ahead of time for a party next weekend?
SO good! I’m usually a wine girl but I wanted to branch out for date night with my partner, and we both loved these. The hint of violet is so fancy without being overwhelming, 10/10 will make again. We even paired it with the lemon garlic chicken recipe from this site and it was chef’s kiss.
Couldn’t afford the crème de violette on my college student budget so I used a tiny splash of violet syrup I had for coffee, and it still turned out amazing! Don’t sleep on this recipe if you don’t have all the exact ingredients, you can tweak it a little and it’s still great.
Made a big batch of these for my weekend brunch with friends and everyone went back for seconds! Even my friend who swears she hates gin drank two of these, that’s how good they are. Garnished with a little lemon twist and a cherry, so pretty for photos too.
