Prep and measure ingredients
First, squeeze fresh ripe limes to yield 60ml (2 fl oz) of juice, straining out any seeds or thick pulp with a small fine sieve if desired. Measure out 120ml (4 fl oz) of light white rum and 30ml (1 fl oz) of 1:1 simple syrup, then place two coupe glasses in the freezer to chill for 3 minutes while you assemble your tools.
Fill shaker with ice
Scoop 2 cups (approx. 300g) of firm, frozen cubed ice into a 500ml capacity cocktail shaker, filling it roughly ¾ of the way full. Do not use partially melted, watery ice chips, as these will over-dilute the cocktail before you begin shaking.
Add liquid ingredients
Pour the pre-measured white rum, fresh lime juice, and simple syrup directly over the ice in the cocktail shaker. Press the shaker lid and integrated strainer firmly into place to create a watertight seal that will not leak during vigorous shaking.
Shake until fully chilled
Grip the shaker securely with one hand on the lid and one on the base, then shake vigorously in fast, consistent up-and-down motions for 12–15 seconds. The outer surface of the metal shaker should be fully frosted and uncomfortably cold to the touch, which signals the drink has reached ideal temperature and dilution.
Strain into chilled glasses
Remove the small cap from the shaker top, hold a Hawthorne strainer firmly over the shaker opening, and pour the shaken daiquiri evenly between the two pre-chilled coupe glasses. Keep the strainer pressed tightly against the shaker rim to catch all ice chips for a smooth, sediment-free pour.
Garnish and serve immediately
Slit each thin lime wheel to its center and rest one on the rim of each glass as a classic, bright garnish. Serve right away, as the drink will warm and lose its crisp, balanced tart-sweet flavor if left to sit for more than 5 minutes.

2.Make simple syrup ahead by heating equal parts granulated white sugar and filtered water (for example, 100g sugar mixed with 100ml water) over low heat for 3 minutes, stirring until sugar fully dissolves; cool completely before use, and store leftover syrup in a sealed jar in the fridge for up to 2 weeks.
3.Avoid over-shaking your daiquiri: shaking for longer than 15 seconds will melt too much ice, diluting the rum and making the drink weak and watery instead of smooth and perfectly balanced.
