Prepare honey syrup
In a small glass jar, combine 60ml raw wildflower honey and 30ml warm (45°C/113°F, not boiling) filtered water. Stir vigorously for 30 seconds until the honey fully dissolves into a smooth, pourable syrup, then set aside to cool to room temperature for 2 minutes.
Prep the cocktail shaker
Add 2 cups of crushed ice to a standard 750ml stainless steel cocktail shaker, leaving 5cm of headspace at the top to allow proper aeration during shaking. Let the ice chill the shaker walls for 10 seconds before adding any liquid ingredients.
Add core cocktail ingredients
Pour the fully cooled honey syrup, 240ml bourbon whiskey, and 120ml strained freshly squeezed lemon juice into the ice-filled cocktail shaker. Press the shaker lid on tightly to prevent leaks during shaking.
Shake to chill and dilute
Hold the shaker securely with one hand on the lid and one on the base, then shake hard in a fast up-and-down motion for 15 seconds, until the entire outside of the shaker feels frosty and ice-cold to the touch (approximately 4°C/39°F).
Strain into serving glasses
Fill 4 short old fashioned (rocks) glasses with the remaining 2 cups of crushed ice, mounding the ice slightly above the rim of each glass. Fit a Hawthorne strainer over the shaker opening, then pour the shaken cocktail evenly between the 4 glasses, dividing roughly 120ml (4oz) per serving accounting for light ice dilution.
Garnish and serve immediately
Hold each lemon peel twist 2cm above a glass, gently squeeze the peel to release its aromatic citrus oils in a fine mist over the drink surface, then rub the peel along the glass rim before resting it on the edge of the ice. Serve within 2 minutes of pouring for optimal chill and bright flavor.
Tips
2.Adjust sweetness to taste before shaking: if you prefer less sweet drinks, reduce the honey amount by 15ml (1 tbsp), or add an extra 15ml honey for a richer, sweeter sip.
3.Skip the warm water if using thin, runny acacia honey, but always use warm water to dissolve thick, crystallized raw honey to avoid sticky clumps that won’t mix into the cold cocktail.
