Leftover Turkey Mexican Salad
intro
Bright, zesty, and protein-packed, this no-cook salad transforms leftover Thanksgiving turkey into a vibrant meal with crunchy veggies, creamy avocado, and tangy lime-cumin dressing.
Ingredients
Steps
Shred Leftover Turkey
Place cold leftover cooked turkey (a mix of breast and a small amount of dark meat for moisture) on the acacia wood cutting board. Use clean hands or two forks to shred the meat into uniform 2-3cm bite-sized pieces, discarding any tough skin, bone fragments, or overly dry, crusty edges. Pile shredded turkey loosely on the corner of the cutting board and set aside.
Chop Salad Vegetables
Working on the same acacia cutting board, use the 8-inch chef knife to chop romaine hearts into 3cm wide pieces, dice Roma tomatoes into 1cm cubes, slice red onion into thin half-moons, and chop cilantro leaves into small pieces. Keep each prepped vegetable in separate small piles on the board to prevent over-mixing and sogginess before assembly.
Whisk Lime Dressing
In the small matte terracotta mixing bowl, combine fresh lime juice, extra-virgin olive oil, ground cumin, garlic powder, sea salt, and black pepper. Use the small stainless steel whisk to stir the mixture vigorously for 30 seconds until fully emulsified, with no separated oil floating on the surface. Set the mixed dressing aside near the cutting board.
Toss Salad Base
Transfer chopped romaine, shredded turkey, rinsed black beans, sweet corn, diced tomatoes, and sliced red onion to the large brushed stainless steel mixing bowl. Use the long beech wood salad servers to toss the ingredients gently for 10 seconds, distributing turkey and vegetables evenly without crushing the delicate lettuce leaves. Do not add avocado or dressing at this stage.
Add Avocado and Cilantro
Slice the ripe avocado in half, remove the large central pit, scoop the flesh from the skin, and cut it into 2cm cubes directly over the mixing bowl to catch any creamy avocado oil. Add the remaining chopped cilantro, then toss the salad very gently 2-3 times to incorporate the avocado and cilantro without mashing avocado chunks into paste.
Dress and Toss Gently
Drizzle three-quarters of the prepared lime-cumin dressing evenly over the salad in the large mixing bowl. Toss very gently with the beech wood salad servers for 15 seconds, adding extra dressing only if needed to lightly coat all ingredients—avoid over-dousing, as wet lettuce will become soggy quickly. Taste and adjust salt or pepper as needed, keeping in mind cotija cheese will add extra salty flavor.
Plate and Garnish
Divide the tossed salad evenly between 4 matte cream ceramic salad plates, mounding each serving slightly in the plate center. Sprinkle crumbled cotija cheese evenly over the top of all servings, and garnish each plate with a small cilantro sprig and a lime wedge on the rim. Serve immediately for the best texture and flavor.
Tips
2.Wait to add avocado and dressing until immediately before serving: cut avocado will brown in as little as 20 minutes when exposed to air, and acidic lime dressing will wilt crisp romaine lettuce quickly if left to sit.
3.For added crunch and texture, top each serving with 2 tablespoons of crushed baked tortilla strips right before eating; do not add them to the full bowl of salad early, as they will absorb moisture and lose their crispness.

OMG, this was such a game changer for post-Thanksgiving leftovers! I had a ton of turkey sitting in the fridge that I was sick of making sandwiches with, threw this together in literally 10 minutes and my whole family devoured it. My kids loved it, even my super picky 7 year old asked for seconds! Added a little extra lime and a dollop of sour cream on top, chef’s kiss.
Brought this to my office potluck yesterday and people were hounding me for the recipe before we even finished lunch! It’s so light but filling, no cooking required which is perfect when you’re already swamped with holiday cleanup. I tossed in some leftover corn I had too and it was chef’s kiss. 10/10 will be making this every year after Thanksgiving.
Wait, 0 cook time? Sign me up! I prepped this on Sunday for my weekday lunches and it held up perfectly all 4 days in the fridge, even with the dressing on it. The only swap I made was using Greek yogurt instead of mayo to cut a few calories, and you couldn’t even tell the difference. SO good.
Added a diced jalapeño and a sprinkle of tajin on top and wow, that kicked it up exactly the level I wanted. I was worried leftover turkey would be too dry for a salad but the lime-cilantro dressing coated every bite perfectly. Even my partner who hates “healthy food” went back for a second helping. Will definitely be making this even when I don’t have leftover turkey, might just grill up some chicken for it on weeknights!
Quick question y’all – is there a gluten free friendly dressing swap if I don’t want to make the homemade one listed? I have a bottle of cilantro lime vinaigrette in my fridge I’ve been trying to use up, would that work here? I’m so excited to make this for our family dinner tonight, I’ve heard nothing but good things!
This was so easy to throw together after work last night! I had leftover turkey from our Sunday roast, tossed in some black beans, diced tomato, avocado, and crushed tortilla strips on top for crunch. My roommate walked in and thought I ordered takeout, lol. Only thing I’ll add next time is a little more cumin for that extra smoky flavor.
