In a medium mixing bowl, whisk together 240 grams spooned-and-leveled all-purpose flour, 1.5 teaspoons baking powder, and 1/4 teaspoon fine table salt for 30 seconds until fully evenly combined. Set the dry ingredient mixture aside.
Cream the Butter and Sugar
In a large mixing bowl, beat 113 grams of softened unsalted butter and 200 grams granulated white sugar with an electric mixer on medium speed for 2 minutes until the mixture is light, pale, and fluffy. Add the 2 room-temperature eggs one at a time, beating for 30 seconds after each addition to fully incorporate, then stir in 3 tablespoons of fresh lemon zest and 1 teaspoon pure vanilla extract.
Mix the Batter in Batches
Alternate adding the dry flour mixture and 120 ml room-temperature whole milk to the butter mixture in 3 equal batches, starting and ending with dry ingredients. Mix on low speed for 10 seconds per batch, stopping as soon as no dry flour is visible (do not overmix, as this creates tough bread). Fold in 30 ml (2 tablespoons) of fresh lemon juice, then pour the smooth batter evenly into the prepared loaf pan.
Bake the Loaf Until Done
Bake the loaf on the middle oven rack for 50 to 55 minutes. Test for doneness by inserting a wooden toothpick into the center: it should come out with 2 to 3 moist crumbs attached, not wet batter and not completely clean (which indicates overbaking). Let the bread cool in the pan for 10 minutes, then lift it out using the parchment overhang and transfer to a wire rack to cool for an additional 20 minutes.
Prepare the Lemon Glaze
While the bread cools, make the glaze by whisking 120 grams powdered sugar and the remaining 50 ml (approximately 3 tablespoons + 1 teaspoon) of fresh lemon juice in a small bowl until completely smooth, with a thick, pourable consistency. Drizzle the glaze evenly over the warm (not piping hot) loaf, letting it drip down the sides, then let the glaze set for 10 minutes before slicing and serving.
Tips
2.Stop mixing the batter as soon as no dry flour remains: overmixing develops gluten in the flour, which will result in tough, chewy bread rather than the desired soft, moist crumb.
3.Zest your lemons before squeezing them for juice; it is very difficult to remove fine zest from a flattened, juiced lemon rind, and you risk scraping bitter white pith into your recipe.
