Prep fire and ingredients
Set up a safe campfire, fire pit, or tabletop propane fire 30 minutes before cooking, letting wood logs burn down to glowing red embers with no tall, leaping flames (target heat level: medium indirect heat, approximately 190°C/375°F measured at grill grate height). Break all graham cracker sheets along their perforations into 8 equal square pieces, and split milk chocolate bars into 4 equal 30g segments, arranging all ingredients on a platter within easy reach of the fire.
Skewer marshmallows securely
Insert one long, clean metal skewer (or wooden skewer soaked in cold water for 30 minutes to prevent burning) lengthwise through the center of each large marshmallow, pushing it 2/3 of the way up the marshmallow so it sits securely without sliding. Do not pierce all the way through the far end of the marshmallow to prevent molten marshmallow from oozing off the skewer as it cooks.
Toast marshmallows evenly
Hold the skewered marshmallows 8-10cm (3-4 inches) above the glowing embers, not directly in open flame, rotating the skewer slowly and constantly for 45-60 seconds total. Cook until the marshmallow exterior is deep golden brown, puffed to 1.5x its original size, and soft and molten all the way to the center; cook for an extra 15 seconds if you prefer a charred, crisp exterior.
Prep graham cracker bases
While marshmallows finish toasting, lay out 4 of the graham cracker squares on a heat-safe serving platter, placing one 30g milk chocolate segment flat on top of each graham cracker base. Set the platter 30cm (1 foot) from the fire edge for 1 minute to let ambient heat slightly soften the chocolate for smoother melting.
Sandwich hot marshmallows
As soon as each marshmallow is fully toasted, hold the skewer directly over a chocolate-topped graham cracker base, and use the remaining 4 plain graham cracker squares to gently press down on the top of the hot marshmallow while pulling the skewer free, sliding the molten marshmallow directly onto the chocolate. Apply light, even pressure to the top graham cracker for 10 seconds to let the marshmallow’s heat melt the chocolate into a smooth, gooey layer.
Rest and serve warm
Let the assembled s'mores rest for 30 seconds after sandwiching to allow the chocolate to fully melt and the marshmallow to cool slightly to a safe eating temperature, to avoid burning your mouth on the molten filling. Serve immediately while still warm, gooey, and soft.
Tips
2.If no outdoor fire is available, make s'mores indoors by toasting marshmallows over a medium-low gas stove burner, or bake assembled s'mores on a lined tray at 200°C/400°F for 3 minutes until marshmallows are puffed.
3.Customize your s'mores by swapping plain milk chocolate for salted dark chocolate, peanut butter cups, or caramel-filled chocolate, or adding a thin slice of strawberry for a fresh, fruity twist.

OMG, made these for our annual family camping trip last weekend and they were SUCH a hit! I swapped regular milk chocolate for cookies and cream bars for half the batch and people went crazy for it.
