Vanilla Coke

Vanilla Coke
⏱️ cook time 5 minutes
🍽️ servings 2
⚡ Difficulty easy

intro

A nostalgic, fizzy chilled soda balancing bold cola flavor with warm, smooth vanilla notes, brighter and more aromatic than pre-bottled versions.

Ingredients

Chilled regular classic cola (not diet) 480 ml (2 cups)
Pure vanilla syrup 30 ml (2 tablespoons)
Large ice cubes 240 grams (approx 2 cups)
Maraschino cherries (for garnish) 2 pieces

Steps

1

Pre-Chill Highball Glasses

Place two 360 ml (12 oz) clear highball glasses in the freezer (set to -18°C / 0°F) for 3 minutes to chill the glassware; pre-chilling prevents fast ice melt and keeps the drink colder longer without reducing carbonation. No heat is used in this step.

Step 1
step1:Pre-Chill Highball Glasses
2

Add Large Ice Cubes

Remove the chilled glasses from the freezer, then add 120 grams (approx 1 cup) of large, solid ice cubes to each glass. Avoid crushed ice, as it melts 2–3 times faster than large cubes and will dilute your drink quickly. No heat is used in this step.

Step 2
step2:Add Large Ice Cubes
3

Drizzle Pure Vanilla Syrup

Pour 15 ml (1 tablespoon) of pure vanilla syrup into the bottom of each ice-filled glass, taking care to drizzle it directly onto the ice rather than splashing it high up the glass sides. No heat is used in this step.

Step 3
step3:Drizzle Pure Vanilla Syrup
4

Pour Chilled Cola Slowly

Tilt each glass to a 45-degree angle, then slowly pour 240 ml (1 cup) of well-chilled cola (stored at 2–4°C / 35–39°F) down the inner side of the glass over a 10-second count. Pouring at this slow, angled pace prevents overflowing foam and preserves maximum carbonation. No heat is used in this step.

Step 4
step4:Pour Chilled Cola Slowly
5

Stir Gently to Combine

Insert a long-handled metal bar spoon into each glass and make exactly one slow, full rotation to lightly combine the vanilla syrup and cola. Do not stir vigorously or make multiple rotations, as this will knock out carbonation and leave the drink flat in under a minute. No heat is used in this step.

Step 5
step5:Stir Gently to Combine
6

Garnish and Serve Immediately

Drop 1 maraschino cherry onto the ice in each glass, insert a paper straw, and serve immediately within 2 minutes of pouring to enjoy the brightest fizz and most balanced vanilla flavor. No heat is used in this step.

Step 6
step6:Garnish and Serve Immediately

Tips

1.Always chill cola to 2–4°C (35–39°F) for at least 4 hours before preparing; warm cola fizzes excessively and goes flat much faster than properly chilled soda.
2.If you do not have vanilla syrup, substitute 1.25 ml (1/4 teaspoon) pure vanilla extract plus 5 ml (1 teaspoon) simple syrup per serving—avoid imitation vanilla, which leaves a harsh, artificial aftertaste that clashes with cola.
3.Pouring cola down the side of the angled glass and stirring only once preserves carbonation, so your drink stays fizzy for 10–15 minutes instead of going flat immediately after pouring.

Vanilla Coke:Frequently Asked Questions

1.Can I substitute diet cola or plain vanilla extract for the regular cola and pure vanilla syrup called for in this recipe?
Diet colas have a sharp artificial sweetener aftertaste that clashes with the warm, smooth vanilla profile we’re going for, and plain vanilla extract tastes harsh and unbalanced in cold, fizzy drinks compared to rich, purpose-made pure vanilla syrup. For the best soda fountain vibe, keep your cola ice-cold, pour it slowly over large ice cubes to preserve fizz, stir gently, and serve immediately with a cherry garnish.

OMG this tastes EXACTLY like the vanilla Coke I got at the old soda fountain when I was a kid! Game changer, I’ve been chasing that flavor for years and this nails it in 5 minutes flat. My whole family went crazy for it at our backyard cookout last weekend.

Wait did you use regular Coke or Coke Zero? I’m trying to cut sugar but don’t want it to taste off!

So glad you loved it, Jake! For anyone asking about sugar-free options, Coke Zero works perfectly with this recipe, just make sure your vanilla syrup is sugar-free too if you’re keeping it low-sugar!

Super easy to throw together for movie night! My kids loved it so much they asked for seconds before the opening credits even finished. Will be making this every Friday from now on, no more running to the gas station for fancy sodas.

yesterday

That makes our day, Lisa! Friday movie night soda tradition sounds like the absolute best, so happy the crew approves.

Took me a second to get the syrup ratio right the first time (I accidentally poured way too much vanilla oops) but once I dialed it in? SO good. Way better than the canned vanilla Coke they sell at the grocery store, no weird artificial aftertaste.

Brought this to our church potluck last Sunday and people were begging for the recipe! I set out a little station with cherry syrup and lime wedges too so people could customize, it was a total hit. 10/10, so simple even I can’t mess it up.

The cherry add-in sounds chef’s kiss! Did you use maraschino cherry syrup or the fancy coffee shop kind?

Love the custom station idea, Carmen! Adding mix-in options is such a fun touch for potlucks. For anyone curious, both maraschino syrup and coffee shop cherry syrup work great, no wrong pick here!

Wait, is there a trick to getting that fizz level right like the actual soda fountain? My first batch was a little flat because I stirred too hard, lmao.

Pro tip: pour the syrup in first, then slowly pour the Coke down the side of the glass, don’t stir at all! It stays fizzy forever that way. I learned that working at a burger joint in high school.

yesterday

Made this for my partner who’s a total vanilla Coke fanatic and he said it’s better than the one we get at the diner downtown. Win for me! Took literally 3 minutes, I didn’t even have to run to the store for anything since I already had vanilla syrup for lattes.

I added a tiny scoop of vanilla ice cream to mine to make it a float and oh my GOD. Next level. Do yourself a favor and try it, you won’t regret it.

That float hack is legendary, Marcus! Nothing beats a creamy vanilla Coke float on a hot summer day, great call.

Tried this for my son’s birthday party and it was such a hit with the teens! I was worried it would be too much work for 15 kids but it was so easy to batch make ahead. Saved me so much money instead of ordering a bunch of delivery sodas.

How did you batch it? Did you use a big drink dispenser or just mix it in pitchers? I need to make this for a graduation party next weekend!

Great question, Lila! If you’re batching for a crowd, mix the syrup into a small amount of warm water first to make sure it dissolves evenly, then add cold Coke right before serving to keep the fizz. A drink dispenser with a spigot works perfect, just don’t seal the lid super tight or the fizz will build up!

Tastes fine, but I thought it was a little too sweet for my taste. Next time I’ll cut the vanilla syrup by half a tablespoon, that should be perfect for me. Still way easier than driving 20 minutes to the soda shop, so I’ll definitely make it again.

I used homemade vanilla syrup (the one I make for my morning iced lattes) and it was chef’s kiss. So much richer flavor than the store-bought syrup, highly recommend if you have 10 extra minutes to make the syrup first!

yesterday

Wait do you have a recipe for that homemade syrup? I’ve been wanting to make my own to skip all the weird preservatives!

Dude, this is exactly what I used to get at the concession stand at my little league games back in the 90s. Total nostalgia bomb. I may have teared up a little on the first sip, ngl.

Right?! I thought I was the only one who missed that specific concession stand vanilla Coke! Canned stuff never hits the same.

yesterday

We love hearing the nostalgia hits! That old soda fountain/concession stand flavor is exactly what we were going for with this recipe, so glad it brought back good memories for you both.

yesterday

Made this last night while we were grilling burgers and it paired so perfectly! I added a little lemon twist to mine and it was so refreshing, even in that 90 degree heat.

The lemon twist sounds so bright and delicious, Chloe! Perfect pairing for a burger cookout, we’ll have to try that hack ourselves this weekend.

Super simple, no fancy equipment needed. I was worried I’d need one of those countertop soda machines to make it but nope, just regular Coke from the 2 liter and vanilla syrup. Foolproof.

Wait, can I use Mexican Coke (the glass bottle one with real sugar) for this? I feel like that would make it taste even more authentic, but I didn’t want to waste a bottle if it doesn’t work.

Mexican Coke works AMAZINGLY for this recipe, Megan! The real sugar gives it that extra authentic old soda fountain flavor, 10/10 recommend grabbing a glass bottle if you can.

I meal prepped a big bottle of the syrup mix to keep in the fridge so I can make this in 10 seconds after work. Absolute lifesaver on long days when I need a little treat.

How long does the pre-mixed syrup last in the fridge? I want to do the same but don’t want it to go bad before I use it!

Great meal prep hack, Kim! If you store the vanilla syrup in an airtight jar in the fridge, it’ll stay good for up to 2 weeks, no problem.

My roommate and I made this for our watch party for the new season of our favorite show and we both agreed it’s better than the overpriced vanilla Coke they sell at the movie theater. We saved like $15 not buying concessions, lmao.

yesterday

Right?! The movie theater charges $6 for a soda, this costs like 50 cents a glass. Total no brainer.

I added a dash of cinnamon to my last batch and it was insane. Tasted like a holiday vanilla Coke, so cozy. Will be making that version all fall long.

I was so skeptical this would actually taste like soda fountain vanilla Coke because so many copycat recipes miss the mark, but wow. You guys nailed it. My dad is a retired soda jerk and even he said it was spot on.

That is the highest possible praise, Lauren! We’re so honored your dad (a real soda jerk!) approved, that means the world.

just now

Super quick, super tasty. I keep a bottle of vanilla syrup at my desk now so I can make this with the office soda machine Coke. My coworkers keep asking what my secret is, lmao.
