Perfect Buttery Boiled Corn on the Cob
intro
Sweet, tender peak-summer corn slathered in melted salted butter, a simple, iconic crowd-pleasing side for warm-weather gatherings.
Ingredients
Steps
Husk and clean corn
Peel back all green husks from each of the 4 ears of corn, pull away all fine, thread-like silk strands, and trim 1cm off the tough, woody stem end of each cob with a sharp paring knife. Rinse the husked cobs briefly under cool running water to wash away any remaining trapped silk bits.
Boil salted water
Fill a large 8-liter stockpot with 6 liters of cold tap water, stir in 1 tablespoon (18g) of kosher salt, and bring to a full rolling boil over high heat, which takes 8-10 minutes. The salted water should taste roughly as salty as seawater to properly season the corn kernels as they cook.
Cook corn cobs
Use long metal tongs to carefully lower the cleaned corn cobs into the fully boiling water, ensuring every cob is fully submerged. Wait for the water to return to a gentle boil, then reduce stovetop heat to medium-high to maintain a steady, non-violent simmer, and cook the corn for exactly 5 minutes. Avoid overcooking, as this will turn kernels mushy and leach out natural sweet flavor.
Drain cooked cobs
Turn off the stovetop heat, lift each corn cob out of the hot water with tongs, and hold the cob vertically over the pot for 2 seconds to let excess hot water drip off. Transfer the drained cobs to a clean ceramic serving platter; do not rinse the corn, as this will wash away surface starch and dilute the natural sweet flavor.
Butter hot corn
While the corn is still piping hot, spread the full 4 tablespoons (57g) of softened salted butter evenly across all 4 cobs, rubbing gently to coat every kernel so the butter melts fully into the crevices between kernels. Sprinkle the buttered cobs evenly with the 1/4 teaspoon (0.5g) of freshly ground black pepper, adding extra pinches of kosher salt if desired.
Rest and serve
Let the buttered corn rest for 1 minute to allow the melted butter to absorb fully into the kernels, then serve immediately while hot. Set out small ramekins of extra softened butter and flaky salt for guests to customize their cobs to taste.
Tips
2.Skip adding sugar to your boiling water; peak-season fresh sweet corn has enough natural sugar, and added sugar will make the cobs taste cloyingly sweet rather than bright and fresh.
3.For a subtle smoky twist, transfer boiled, drained cobs to a medium-high heat grill for 1 minute per side after boiling to add light char marks before buttering.

OMG this is the only corn recipe I’ll ever use from now on! I brought this to our neighborhood potluck last weekend and people were asking me for the recipe left and right. The butter soaks in perfectly instead of just sliding off the cob, it’s insane. 10/10
Game changer for weeknight dinners! My kids are so picky about veggies but they devoured two cobs each last night, no complaints whatsoever. I didn’t even have to remind them to finish their sides. SO good.
Wait a second, I always overboil my corn and it turns all mushy and gross. The 10 minute boil time here? Perfect. Crisp, sweet kernels, not at all soggy. I prepped a batch for my weekday lunches and it reheats like a dream too.
I added a tiny pinch of Old Bay to the boiling water like my grandma used to and OH MY GOODNESS. The butter + Old Bay combo on this sweet corn? I could eat three cobs for a meal no problem.
I’ve literally never boiled corn before, I was convinced I’d mess it up. This recipe was so easy, step by step made total sense, and my roommates said it was the best corn they’ve ever had. Win for the new apartment!
Wait I usually grill my corn, thought boiled was always bland and boring. Decided to give this a shot when it poured rain during our 4th of July cookout and I couldn’t use the grill. Nobody even missed the grilled corn! The buttery flavor was unreal. Only reason it’s not 5 stars is I wish I’d added a little more salt to the water, totally my bad though.
I used vegan butter for this since I’m dairy free and it still came out SO flavorful! I was worried it wouldn’t have that rich buttery taste but the boiling method really locks in the flavor even with plant based butter.
Made this for our church potluck on Sunday and the whole pan was gone in 10 minutes! Multiple people said it tasted like the fair corn we wait all summer for. No more sad, dry corn at potlucks for us!
Tried this last night and tossed the cobs in a little chili lime seasoning after they came out of the butter bath. Chefs kiss! Sweet, salty, tangy, a little heat – absolute summer perfection.
Super easy, minimal ingredients, I already had everything in my kitchen except the fresh corn. Perfect for a college student on a budget, no fancy equipment needed at all. Ate two cobs with my frozen burger dinner, 10/10.
The butter bath trick is genius! I used to just slather butter on corn after taking it out and half of it would drip onto my plate before I even took a bite. This way every kernel is evenly coated, zero waste. SO good.
Picked up a dozen fresh ears from my local farmers market over the weekend and used this recipe. The sweet fresh corn paired with that salty buttery boil? Tasted like summer in every bite. Will be making this every week until corn season ends.
Made this for a casual date night in with my boyfriend, paired it with steak and roasted potatoes. He said it was better than the corn we got at the fancy steakhouse we went to for our anniversary. Total win, will be making this again for sure.
20 minutes total from start to finish? Sign me up. I don’t have a ton of time to cook after work and this side comes together so fast, no fuss, no mess. I even threw a few ears in the boil while my chicken was baking, perfect timing.
