intro

Tender, caramelized roasted corn slathered in smoky garlic herb butter, with juicy, sweet kernels—an easy, crowd-pleasing staple for summer outdoor gatherings.

Ingredients

Fresh corn on the cob 4 ears (approx 800g, husked, silk removed)
Unsalted butter 56g (4 tbsp, softened)
Extra-virgin olive oil 15ml (1 tbsp)
Garlic powder 1 tsp
Smoked paprika 1/2 tsp
Kosher salt 1 tsp
Freshly ground black pepper 1/4 tsp
Fresh flat-leaf parsley 2 tbsp (finely chopped)

Steps

1

Preheat and prep corn

Preheat your oven (or outdoor gas/charcoal grill) to 200°C (400°F). Remove all husks and fine silk strands from 4 ears of corn, then pat each ear completely dry with paper towels to encourage better caramelization during roasting.

Step 1
step1:Preheat and prep corn
2

Mix herb butter coating

In a small mixing bowl, combine 56g softened unsalted butter, 15ml extra-virgin olive oil, 1 tsp garlic powder, 1/2 tsp smoked paprika, 1 tsp kosher salt, 1/4 tsp freshly ground black pepper, and 2 tbsp finely chopped fresh parsley. Stir with a small spoon until the mixture is completely smooth and seasonings are evenly distributed.

Step 2
step2:Mix herb butter coating
3

Coat corn evenly

Use a silicone basting brush to spread the herb butter mixture over every surface of each dried corn cob, using roughly 1 tbsp of the butter mixture per ear to ensure full coverage, with no dry patches left on the plump kernels.

Step 3
step3:Coat corn evenly
4

Arrange cobs for roasting

Place all buttered corn cobs in a single layer on the rimmed parchment-lined baking sheet, leaving at least 2cm (3/4 inch) of open space between each cob to allow hot air to circulate and prevent steaming.

Step 4
step4:Arrange cobs for roasting
5

Roast to golden caramelization

Set the baking sheet on the middle rack of the preheated 200°C (400°F) oven. Roast for 20 minutes total, using a pair of metal tongs to flip each cob halfway through cooking at the 10-minute mark, until kernels are tender and dotted with light golden, slightly charred caramelized spots.

Step 5
step5:Roast to golden caramelization
6

Rest and serve hot

Remove the baking sheet from the oven once done, let the corn rest for 2 minutes to allow melted butter to absorb into the kernels, then brush with any remaining melted butter pooled on the baking sheet before serving immediately.

Step 6
step6:Rest and serve hot

Tips

1.If using an outdoor grill instead of an oven, place buttered corn directly over medium-high heat (190-230°C / 375-450°F) and cook for 12-15 minutes, turning every 3 minutes to get even char marks without burning.
2.For a Mexican street corn (elote) twist, sprinkle finished hot corn with 2 tbsp crumbled cotija cheese, 1 tsp chili powder, and a squeeze of fresh lime juice before serving.
3.Avoid wrapping corn in foil for this recipe; open roasting allows kernels to caramelize, while foil traps steam and results in soggy, less flavorful corn.

Roasted Corn:Frequently Asked Questions

1.Can I roast this corn in its husk instead of peeling it fully first?
You absolutely can! For extra-steamy, juicy kernels, pull husks back (leave them attached at the base), strip off all the silk, slather on the smoky seasoned butter mixed with a touch of olive oil, then fold husks back up to cover the cobs. Roast 5 minutes longer than peeled corn, and pull husks back for the last 3 minutes to get that craveable caramelized, slightly charred edge.
2.I don’t have an outdoor grill—can I make this roasted corn in my home oven?
No grill? No problem at all! This corn turns out beautifully with standard oven roasting. Preheat your oven to 425°F, toss shucked cobs lightly in the olive oil and smoky butter mix, arrange directly on the middle oven rack (set a baking sheet below to catch drips), and roast 20–25 minutes, flipping halfway, until kernels are tender with light golden caramelized spots.
3.Can I prep parts of this recipe ahead of time for a big summer cookout?
You sure can, which makes this perfect for crowds! Mix the smoky garlic-paprika butter up to 3 days ahead, store it tightly covered in the fridge, and shuck the corn 1 day ahead, wrapped in damp paper towels in an airtight fridge bag. Wait to toss cobs with oil and butter until right before roasting to avoid soggy, dull-tasting kernels.

OMG this corn is a total game changer! I made it for our Sunday family dinner last night and even my super picky 7 year old asked for seconds. The smoky butter flavor is insane, I didn’t change a thing to the recipe. So easy too, perfect for a weeknight when I don’t feel like slaving over the stove.

yesterday

Wait did you roast it in the oven or on the grill? I’m prepping for a backyard cookout this weekend and wondering which works better!

So glad your family loved it! You can absolutely make this on the grill over medium heat for extra char if you prefer — just keep the husks pulled back to slather on that smoky butter first, and turn every 5 minutes for even cooking!

I brought this to our neighborhood block party potluck last weekend and people were literally coming up to me asking for the recipe before I even set the platter down! The smoky paprika in the butter is chef’s kiss, I added a tiny pinch of cayenne for a little kick and it was perfect.

Love that you added a pinch of cayenne — that’s such a great hack for a little extra heat, I’ll have to try that next time I make it for my own crew! So happy it was a potluck hit.

SO good. I was skeptical roasting corn in the oven would taste as good as grilled, but the smoky butter totally makes up for no grill char. Cook time was exactly 25 minutes like the recipe said, no guesswork. Will be making this all summer long.

Easy, fast, minimal cleanup? Sign me up. I tossed this together last minute for taco night and it paired so well with our carne asada tacos. My only tiny note is I wish I’d softened the butter a little more first so it spread easier on the cobs.

Pro tip! I melt the butter and mix in the smoked paprika and garlic powder then brush it all over the corn instead of spreading softened butter — way easier and every bite gets coated!

Great tip from Kara! Softening butter for 10-15 seconds in the microwave works perfectly too if you don’t want to melt it all the way, and makes spreading so much smoother. So glad this worked for your taco night!

I made these last night and they were incredible, but I’m wondering if these hold up well for meal prep? I’d love to roast a big batch on Sunday to pair with my weekday lunches, just worried the corn will get mushy sitting in the fridge.

Great question! This corn tastes best fresh out of the oven, but if you do prep ahead, store the cooled cobs in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer at 350F for 5 minutes to crisp it back up instead of microwaving to avoid sogginess!

Took this camping last weekend and wrapped the cobs in foil to roast over the campfire with that smoky butter. Absolute home run. Tasted like we got it from a fancy BBQ stand, not something we threw together over a fire. 10/10.

Y’all… I don’t even like vegetables that much but I ate two full cobs of this last night. The buttery smoky flavor doesn’t taste like boring 'healthy' food at all. My roommate thought I ordered takeout when she smelled it cooking lmao.

LMAO same! I usually douse corn in so much cheese and sour cream to make it taste good, but this needs literally nothing else. The flavor is perfect on its own.

I’ve been making corn on the cob for my grandkids for 50+ years, boiling it with a little sugar like my mom taught me, and I have to say this roasted version might be my new go-to. The smoky flavor is so rich, the kids said it tastes like the corn we get at the state fair! I did add a little extra salt, but that’s just personal preference.

Wait that state fair comparison is so accurate! I made this last week and immediately thought of the roasted corn stands at our local fair, minus the $8 price tag lmao

That is such a high compliment coming from someone who’s been making corn for decades! The extra salt is totally a call worth making — everyone’s taste is different, so adjusting seasoning to your preference is always encouraged. So happy the grandkids approved!

Made this in my air fryer instead of the oven because I didn’t want to heat up the whole house, turned out amazing! 375F for 12 minutes, flipped halfway, brushed the butter on at the end. Crispy, smoky, buttery, zero complaints.

Okay I am literally the worst at cooking, I burn toast 90% of the time, and I managed to make this perfectly on the first try! The instructions are so straightforward, no weird ingredients I had to run to three grocery stores to find. So proud of myself lol.

This makes our day to hear! This recipe is perfect for new cooks because it’s so forgiving — so proud of you for nailing it on the first try, hope this gives you confidence to try more easy recipes soon!

This has officially made our weekly dinner rotation! It’s so fast to throw together, pairs with literally every protein I make — burgers, chicken, salmon, you name it. I’ve made it three times in the last two weeks, that’s how much my family obsesses over it.

Wait how much does this cost to make roughly? I’m feeding a family of 5 on a tight grocery budget right now and looking for cheap, filling sides!

Corn is super cheap right now at my local grocery store, like 50 cents a cob! The rest is just butter, smoked paprika, garlic powder, and salt which I already had in my pantry. For 5 cobs it cost me like $3 total, super budget friendly!

The smoked paprika in the butter is chef’s kiss. I used salted butter so I skipped adding extra salt, and it was perfectly seasoned. The corn came out juicy and tender, no dry, overcooked kernels at all. Will be making this for our 4th of July cookout for sure.

Oh perfect, I was looking for sides for my own 4th of July party! How many cobs does this butter recipe cover? I’m expecting about 12 people so I need to scale it.

just now

I doubled the garlic powder in the butter because I am obsessed with garlic, and holy cow it was incredible. If you’re a garlic fan like me, do not sleep on adding extra. This corn is better than any restaurant version I’ve ever had.
