Steep Black Tea Base
Bring 200ml filtered water to a gentle 95C (203F) boil in the small stainless steel saucepan. Remove from heat, add 2 tablespoons loose-leaf black tea, cover, and steep for exactly 3 minutes—do not steep longer, as this will create bitter tannins. Strain immediately through the fine-mesh stainless steel strainer into the clear glass mixing pitcher, then set aside to cool to room temperature for 10 minutes.
Make Quick Syrup
Once tea is strained into the pitcher, return the empty small saucepan to low heat. Add 3 tablespoons raw cane sugar and 2 tablespoons of the cooled steeped tea, stirring continuously with the long-handled stainless steel stirring spoon for 1-2 minutes until sugar is fully dissolved, with no gritty grains visible at the pan bottom. Remove from heat and let the light golden syrup cool completely, about 5 minutes.
Prep Passionfruit Pulp
Place the small bamboo cutting board on the center of the counter. Set 5 of the 6 passionfruit on the board, and use the paring knife to cut each in half horizontally. Hold each half over the fine-mesh strainer set atop the mixing pitcher of cooled tea, and scoop soft pulp and seeds into the strainer. Press gently with the back of the stainless steel stirring spoon to extract all bright golden juice and soft pulp, leaving tough black seeds in the strainer. Cut the 6th reserved passionfruit into 4 equal wedges for garnish, and set aside in a small clear ramekin.
Juice Fresh Limes
Leave the bamboo cutting board in place. Roll each of the 3 limes firmly on the marble counter for 10 seconds to break down internal membranes and maximize juice yield. Cut each lime in half with the paring knife, then use the matte yellow ceramic citrus reamer to squeeze all juice into the mixing pitcher, catching any lime seeds in the reamer’s ridges. You should collect approximately 150ml (2/3 cup) of fresh lime juice.
Mix Chilled Base
Pour the fully cooled simple syrup into the mixing pitcher with the tea, passionfruit juice, and lime juice. Stir thoroughly with the stainless steel stirring spoon to combine all ingredients into a uniform bright golden-orange liquid. Taste and adjust: add 1 extra tsp lime juice if too sweet, or 1 tsp extra syrup if too tart. Loosely cover the pitcher and chill in the refrigerator for 20 minutes before serving.
Prep Ice-Filled Glasses
Remove the chilled drink base from the refrigerator. Line the four clear highball tumblers in a row on the counter in front of the mixing pitcher. Use the stainless steel ice scoop to fill each tumbler 3/4 full with crushed ice, packing it gently to create a long-lasting cold base.
Pour Base and Fizz
Pour the chilled passionfruit base evenly between the four ice-filled glasses, dividing it equally so each glass is half full. Leave 2cm of headspace at the top of each tumbler. Slowly top each glass with ice-cold sparkling water, pouring gently down the side of the glass to preserve as many bubbles as possible—do not stir aggressively, as this will flatten the fizz. Give each glass a single light swirl to lightly combine the base and sparkling water.
Garnish and Serve
Garnish each glass: perch a reserved passionfruit wedge on the rim, add a thin lime wheel, slap a mint sprig between your palms to release its aromatic oils before tucking it into the ice, and slide a matte gold metal straw into each glass at a 45-degree angle. Serve immediately, while the fizz is bright and the ice is fully frosty.
Tips
2.Avoid oversteeping the black tea: steep for exactly 3 minutes at 95C (203F), then strain immediately. Longer steeping or boiling-hot water extracts bitter tannins that will overpower the bright, sweet-tart fruit flavor.
3.Add sparkling water immediately before serving, pouring gently down the side of the glass to preserve bubbles. For an adult cocktail version that leans into the IPL acronym, replace half the sparkling water with cold, hoppy India Pale Lager for a crisp, tropical beer twist.
